きのこ 今年の夏頃から、マーケットで手に入るきのこの種類がぐんと増え、きのこ売り場へ行くと、まさに、おもちゃ売り場の子供のように、あれも買いたい、これも買いたいで、つい何種類買い込んでしまいます。 長い間、きのこといえば、ボタンの形をした白いマッシュルームだけでした。数年前から、クレミニやポータベロ等の茶色のマッシュルームが加わり、続いて、生しいたけがお目見えしましたが、厚みに欠け、入荷日から日が経つと小さくなってしまうものでした。 そういったわけで、日本の料理の本を見てもきのこ料理はすっかりあきらめていたのです。そんなところへ、突如として、しめじ、なめこ、まいたけ、ひらたけ、エリンギといっせいに登場してきたのです。椎茸も肉厚のもの。まさに、「ひゃー、わー」です。おそらく生産者のみなさんは数年間栽培を繰り返すといった苦労をされたことでしょう。喜んで買っている消費者がいることをぜひ知ってください。 写真は、真ん中の椎茸を囲んで、下に、なめこ （Forest Nameko)、左に、エリンギ (King Trumpet)、上が、しめじ (Brown Clamshell) と シャンテレル （Chanterelles）、右が、ひらたけ (Oyster Mushromm) ですが、栽培に使う木が違うからでしょう、名前は同じでも日本で手に入るきのことはちょっと違っているような感じもします。
