スーパーで日本でおなじみの色のゴボウを見つけた2，3日後、東洋食品店で白っぽい色のゴボウを見かけ、それならと、2つの色違いのゴボウの味を比べてみました。お店の人の話では、白っぽいゴボウは台湾産（あるいは台湾原産で米国で育成）とのことです。ゴボウ料理といえば、なんといってもきんぴらごぼう。味付けをなるべく同じにして、色違いのきんぴらができあがりました。味比べの結果は、黒いきんぴらはゴボウの味が強く、白いきんぴらはやわらかく食べやすいと、優劣つけ難いといったところです。
