Wine Pairings

I have been talking about wine lately and what I have learned from my hands on experience with the tastings at work. Sometimes we have wine pairings with our food at work to compliment the dishes. However, it is very subjective to the taste buds of the person that is trying it. We had the private dining room filled with 15 different people tasting wine and food together and interestingly enough none of the voting decisions were unanimous. Each individual liked certain wines with certain foods better than others. What this made me realize is that when suggesting wine to someone you have to be careful because they might not like it. The best way to get around this is to listen to the person and try and understand what kind of tastebuds they have for wine, do they like white and sweet or red and bold etc… This is the only way I feel to really come across geniune and help the guest to enhance their dinning experience.
