Collaborative Haiku Poem –

tekkamaki

special order

(Yoko version)

original style
sushi chief makes it
just for you

(Michiko version)

Sushi, particularly nigiri, is still very popular in the U.S. However, sushi sold in stores like supermarkets seems changing in its appearance and taste unlike anything ever seen in Japan! For example, norimaki and uramaki are covered with mayonnaise or chili sauce. Simple tekkamaki and futomaki seem to have disappeared from the display cases. When I want to eat tekkamaki, I make sure that the sushi chefs are not busy, so that I can place a special order for tekkamaki without mayonnaise. BTW, sushi chefs here are Asian, but not Japanese. Thus, I explain to them what I want without saying the word tekkamaki. “Different places, different things”. Just like the tastes of ethnic foods in Japan are changed to Japanese liking and which ingredients are available.
